This refreshing Beet and Quinoa Salad is one of my favorite go to’s for lunch. I love to eat or juice beets often because of their potent health benefits. Not only do beets contain high amounts of vitamins and minerals, but they have the ability to purify your blood, detoxify the body, are a high source of energy and great for mental health (relaxes the mind). Quinoa contains a high amount of complete protein and is loaded with all of the essential amino acids we need, plus minerals, antioxidants, and fiber. I also love that I can make a large amount to eat throughout the week.
Beet and Quinoa Salad
5 small beets cooked and cut into 1′ pieces ( I use the cooked and prepackaged ones from Trader Joes)
1 cup cooked quinoa
3 tbsp. crumbled goat cheese
1/4 cup olive oil
1/4 red wine vinegar
1/2 tsp sugar
2 inches green onion thinly sliced (scallion)
sea salt and pepper to taste
In a large bowl or container add quinoa, beets, and goat cheese. In a separate bowl mix olive oil, red wine vinegar, sugar, green onions and salt & pepper. There will be extra dressing, so add according to your preference being careful not to use all of it in this salad. After adding the dressing to your salad give it a nice toss and garnish with more green onion. Refrigerate for up to one week.
