Oh my goodness…do the French know how to make dessert, and this Berry Clafoutis is no exception! This is one of my favorite desserts and it’s a hit every time I make it! I can honestly eat a whole Clafoutis in one sitting if someone doesn’t watch me. Clafoutis is a traditional French dessert made with cherries, but can also be made with other berries or fruits like plums, apples, or pears. It’s consistency is between a cake, custard, and pancake. It’s super easy to make and crazy delicious!

Berry Clafoutis (Serves 6-8):
1 ¼ cups milk
½ cup sugar
½ cup flour
¼ teaspoon salt
1 Tablespoon vanilla
¼ teaspoon lemon zest
1/8 teaspoon cinnamon
2 cups of raspberries, strawberries, & blueberry mixed
Small carton whipping cream and ¼ cup sugar or store bought all natural whipped cream
Fresh whipped cream is optional, but highly recommended! Pour small 4oz carton of whipping cream in blender with about ¼ cup sugar or use electric mixer. Blend until fluffy.
Preheat oven to 350°. In a blender blend the milk, 1/3 cup of the sugar, eggs, vanilla, lemon zest, salt, cinnamon and flour.
Pour a ¼ inch layer of the batter in a lightly and evenly buttered pie baking dish. Place in the oven until batter firms up a bit (it will look spongy). Remove from the oven and place the berries or other fruit over the firm batter, then sprinkle on the remaining sugar. Pour on the rest of the batter evenly.
Bake at 350° for about 45 minutes to an hour. The clafouti is done when puffed and brown and a knife or toothpick stuck in the center comes out clean. Great served warm or room temperature. Refrigerate leftovers up to week.
