Springtime gives me an excuse to make yummy frozen treats, so I’m really excited about that! My son Jaden is even more excited because he gets to eat them, and I don’t feel bad about giving them to him since they are healthier than those store bought pops. These Orange Coconut Creamsicles are free of all those nasty ingredients, dairy free, and delicious!
Orange Coconut Creamsicles :(serves 6-8)
- 1 cup orange juice (fresh or frozen)
- full fat coconut milk
- 3 tablespoons honey
- ½ teaspoon vanilla extract
- ¼ teaspoon orange extract
In a medium bowl, whisk all ingredients together. Pour mixture into popsicle molds, then add popsicle sticks. Freeze for 4-6 hours or until frozen. When you’re ready to serve, run some warm water along your popsicle mold to loosen the popsicles and serve immediately.
