Ingredients (serves 4):
- 2 cups milk of choice (I used almond milk)
- 1/2 teaspoon cinnamon
- 1 vanilla bean, seeded
- 2 cups cooked quinoa
- 1 cup blueberries
- 1/4 cup sliced almonds
- 1 tablespoon honey
- In a large bowl or glass measuring cup, whisk together milk, cinnamon and vanilla bean seeds.
- Scoop the quinoa evenly into serving bowls. Serve immediately with milk mixture, topped with blueberries, almonds and a drizzle of honey. Don’t let the quinoa sit in the milk until serving, to avoid the quinoa from becoming soggy.
