This recipe is simple, healthy, and makes for a great lunch. You can use a julienne peeler or a veggetti like I used!
notes: If you use a julienne peeler stop peeling the zucchini when you reach the inner seed part of the zucchini.
1 medium zucchini
1 handful of small tomatoes cut in half
1 tsp finely minced garlic
1 sprig of basil leaves finely sliced
1 tbsp of balsamic vinegar
1 1/2 tbsp extra virgin olive oil
About a handful of feta cheese
salt + pepper
In a small bowl combine the halved tomatoes, garlic, basil, feta cheese, balsamic vinegar, olive oil, salt and pepper. Toss lightly to combine and set aside for 10 minutes or so.
Using a julienne peeler or veggetti, slice the zucchini into long strands. Place them in your serving bowl and toss them with a bit more olive oil, salt and pepper.
Now toss the tomatoes with the zucchini noodles. Garnish the top of the dish with some extra basil and feta cheese.
